My experience so far (doing the same) is about 4 paid subscribers every 100 non paid subscribers. If you have the same ratios you'll need 1,000s of subscribers to make a few hundred a month.

Do you know if Substack has an option where you can just accept donations instead of a subscription signup>?

No, to my knowledge they don't. If you want to you can subscribe and then cancel the subscription. That way you will have made one "donation" without a recurring debit one year later. Thank you either way.

The only way you can do it I guess is to add bitcoin etc links on your posts. Or bank account details I guess but might not be such a great idea.
